ALYCE’S DATE BREAD
A rich, moist bread reminiscent of a steamed pudding. A warm slice with whipped cream or cream cheese is as good as any dessert. Great with brunch or any meal. Makes one loaf
• 1 cup chopped dates
• 1 tbsp orange zest (optional)
• 1 tsp baking soda
• 1 tbsp butter
• 1 cup boiling water
Cover first four ingredients with the boiling water and let set until cool.
Cream together until smooth and fluffy:
• 1 egg
• ¾ cup sugar
• 1 tsp vanilla
• 1 tsp maple or rum extract (optional)
• 1 ¼ cup flour
• 1 tsp baking powder
Gradually add flour to egg and sugar mixture, mixing to blend.
• Date mixture
• 1 cup chopped walnuts
• ½ cup fresh or dried cranberries (optional)
Bake in greased & floured loaf pan
350 degree oven for 55-60 minutes.
*Tent with tinfoil last 15 minutes to keep moisture in or
*Set shallow pan of water on rack beneath loaf pan while baking.
