GRANDPA BERYL’S CORN CASSEROLE
2 cans cream corn
2 cups crushed soda crackers (1 sleeve of crackers)
2 cups milk
¼ cup melted butter
½ tsp pepper (fresh ground if possible)
½ tsp salt
Preheat oven to 350°. Butter a three quart casserole dish.
Beat eggs and add milk and melted butter. Mix on medium until blended. Add salt and pepper to taste. Stir in cracker crumbs and creamed corn. Pour into prepared casserole dish.
Bake uncovered at 350 ° for 50 minutes. It is done when a knife, inserted in the center, comes out clean. Serve warm.
Can make ahead and reheat for 30 minutes before serving.
